J.A. Henckels Twinworks of Solingen, Germany produces phenomenal carbon steel blade cutlery. This knife is of exceptional quality and has been in my family for well over 70 years. It is in great condition (no chips or fractures) and the wood handle is safe and secure. A bit of background:. If you're questioning why this 10" classic J.A. Henckels Twinworks chef's knife does not resemble the one in today's shops (or in your block), it is because it is strong (hand-forged), is much and completely well balanced lighter than modern-era Henckels. Knowledgeable craftsmen spent time hammering down a raw blank, warming it, hand-grinding it, eventually turning it into a knife that was either semi-rigid or stiff or flexible, depending upon use. This knife's blade has constantly been preserved well. This older, conventional profile features a guard and an essential tapered tang through the wood (unvarnished pecan, probably) manage; it does not have the familiar thick rounded-rectangular boost and cumbersome heft of modern-era Henckels. It mirrors an earlier age in kitchen area knife design, and looks rather much like the chef's knives the firm made that won numerous European exhibitions in 1900 and 1904. This knife can predate World War II, as it was contributed to my mom's cooking area in 1945. It is incised "J.A. Henckels. Twinworks Solingen, Germany" and (Model) "102-10". It is fashioned in the earlier German design, with a comparable profile to top-tier American knife business like Lamson and Dexter because age.
